WINE AND CUISINE BEEF STOCK 500 gr. lean beef Half a Chicken or Capon 1 beef bone (optional) 3 lt. water 1 onion 1 stalk celery 1 carrot Salt to taste Preparation of Beef Stock: To make good stock you must put all the ingredients in cold water and bring to a boil. On the other hand if you want to boil meats you have to add it when the water is boiling. Put water in a large pan, put in all the meat and vegetables and bring to a boil, let simmer on a low heat for at least 2/3 hours. Check the meat as it cooks from time to time. The stock should thicken.
