WINE AND CUISINE

PIZZA DOUGH

½ kg. of type “0” flour
1 cube of yeast
1 tablespoon olive oil
Salt (to taste)
Water (enough to form a soft dough)

Preparation of the Dough for Pizza:

Dissolve the yeast in a glass of water, mix all the ingredients and form a soft, smooth dough.
Leave the dough covered for a couple of hours, until it has doubled in size.
Roll out the dough on a baking sheet, allow it to stand for around 30 minutes. Then top it as you like.

Some ideas for pizza toppings
You can top a pizza in many different ways: you just need a bit of imagination. It then depends upon personal tastes.
An alternative might be to serve it without tomatoes, with smoked cheese and bacon, and then, just before serving, add some slivers of Parmesan cheese and drizzle with balsamic vinegar.
Or make the topping with raw ingredients. Make the rim of the pizza a bit higher than usual and then spread tomato sauce on the base, and bake. Just before serving add arugula, cherry tomatoes and small cubes of mozzarella cheese (preferably buffalo). Then add olives, etc. to taste.
